Sassy Sweets: Tiramisu Pudding Parfaits
When John and I first stopped and tried the Grey Ghost Bakery (check out their NEW website later this week!!) cookies in our whirlwind trip to Charleston, we were knocked dead in our tracks by their chocolate espresso cookies. Subtly coffee-like, the chocolate is so rich and they are just ever so slightly soft; just the way a good cookie should be, in my opinion. Sure enough, we made our way back to the booth again and again.
Finally, on our last night in Charleston, John surprised me with a huge bag of the chocolate espresso cookies! I wish I could say we waited until we got home to open the bag! Sometimes, things are just too yummy to put off! So when they were thrilled to offer The Growing Foodie readers a giveaway, I put the plan into motion ASAP!
Sure enough the box came a few weeks later. If you can imagine, it was like having a grandma make you cookies and ship them in a care package. They are seriously that good. Kindly enough, they will be offering a Growing Foodie reader the chance to win a trio of their flavors, starting with the seriously delicious chocolate espresso, as well as cinnamon pecan and molasses spice. Serves: 8 (8 1/2 pint mason jars)
1/2 cup cocoa powder
1 cup sugar
3/4 cup flour
4 cups milk (I used skim)
1 cup strong brewed espresso
3 teaspoons vanilla extract
16 ounces marscapone cheese
16 Grey Ghost Chocolate Espresso Cookies, crumbled
In a large saucepan, combine cocoa powder, sugar, and flour. Whisk in the milk and espresso over medium heat. Cook, stirring constantly, until the mixture has thickened and is bubbling. Remove from the heat and stir in the vanilla. Chill for 30 minutes. Then, whisk in the marscapone cheese.
To make the parfaits, layer 1/2 of the chocolate mixture evenly into the bottoms of each mason jar. Top with a handful of Grey Ghost Chocolate Espresso cookie crumbs. Then, add another chocolate layer. Top with additional cookie crumbs, if desired. Serve immediately.
