Dorm Room Dinner: Chili-Rubbed Tilapia with Cilantro-Lime Butter

Giveaway Alert!  When we got hooked up with Local Happiness, I knew it was the perfect way to marry our love of food, artisanal products, and community service with a vendor that really takes all of those things to heart.  How often do you hear that, right?  Well, Local Happiness is a company like none other I've heard before. They allow schools and other organizations to fundraise by selling local Carolinian products through their website and catalogs.

When I went to school, we sold wrapping papers, popcorn, and a few other things I can't think of at the moment but that everyone was guilted into buying because it was for our school for goodness sakes!  Well, apparently, the South Carolina kids are so much cooler than I ever was.  They are selling genuinely delicious and fun local products to their neighbors, friends, and family. In turn, think about how this helps a local business - not only can you make a deep impact on your small community but in turn, the community can help your small business.

It gets a lot of Mom and Pop businesses a ton of exposure.  In all, it is seriously a win-win and I can't wait to see Local Happiness expand to NYC and get doing this with all our local artisans.  I can't think of a cooler way to raise money, honestly.  Local Happiness sent us a few of their foodie products and we got right to work with them.  Best of all, I have a seriously AWESOME basket to share with one of you!  Five delicious artisanal treats from coffee to honey to a seriously spicy rub - it's all coming up this week!
Chili-Rubbed Tilapia with Cilantro-Lime Butter
Serves:  4
2 tablespoons salted butter, room temperature
1 lime, juiced and zested
1/4 tablespoon cilantro, finely minced
4 tablespoons L'Ecuyer's Gourmet Caveman Rub
4 tilapia filets (about 1 1/2 pounds)

Make sure butter is at room temperature and easily malleable.  Add 1/2 tablespoon of lime juice, 1/2 tablespoon of lime zest, and 1/4 tablespoon cilantro to the butter.  Mix until well blended.  Set aside (keep it at room temperature for ease of serving).  Preheat the grill to medium heat (or oven to 350 degrees F). Divide the spice evenly and rub into each of the tilapia filets on both sides.  Grill the fish about 3 minutes per side until fully cooked through; alternatively, bake for 6-8 minutes, until fully cooked through.  Top with cilantro-lime butter and serve immediately.
