Sassy Sweets: Peanut Butter Swirl Blondies

John is a very patient man (if you guys haven’t figured that out already).  A lot of the time that I’m baking for the office, I really only make enough to feed my colleagues.  And this normally leaves John smelling, dreaming, and practically salivating for whatever is baking in the oven.  Now he’s no martyr.  Oftentimes he does get to “taste-test” whatever comes out of the oven before it gets brought into the office, to be devoured by the masses.

Sometimes, I make something that is something he would particularly crave.  Like these blondies.  John is a huge peanut butter fan and when you add some chocolate to the mix, he is sold.  In fact, he was salivating just over the ingredients.  That’s when you know it’s going to be bad trying to get the dish out of the house without a forkful being gone (or 2 or 3 forkfuls to be more precise). 

We were in such a rush the morning I brought these in that John only got one small taste of the blondies, much to his chagrin.  So, before I put them out to be inhaled by starving untrained masses (I swear, free food just brings out the inner beast in people, doesn’t it?), I grabbed John four blondies. 

To make sure he was properly grateful, I let him know that he could expect a peanut buttery treat when I got home.  I texted him:  “I stole you 4 blondies”.  Usually, he’s too busy to answer me right away so no one was more shocked than I when he wrote back immediately:  “That’s love!” Well, I thought so, too!  And if that’s the kind of love we have (just being thoughtful and considerate of what the other one wants), I’m convinced that’s a pretty delicious love.  Almost as delicious as these blondies.   
Peanut Butter Swirl Blondies (adapted from runs.on.sundae)
Serves: 9 (9x9 inch pan)
1 stick butter, melted
1 cup brown sugar
1 eggs
2 teaspoons vanilla
1 cup flour
1/2 cup chocolate chips
1/2 cup peanut butter chips
2/3 cup peanut butter, melted

Preheat the oven to 350 degrees F.  Spray a 9x9 pan with cooking spray and set aside.  In a large bowl, beat butter and sugar until well-combined.  Beat in egg and vanilla.  Then, slowly beat in flour, until just fully mixed in.  Stir in chocolate chips and peanut butter chips.   Pour into the prepared 9x9 pan.  Then, spoon melted peanut butter over the top.  Using a knife, swirl the top of the batter with the peanut butter.  Bake 15-20 minutes, until the edges just turn brown.  When a toothpick is inserted, only a few moist but intact crumbs should stick to the toothpick.  Let cool completely (for the peanut butter layer to firm up) before serving.
