Sassy Sweets: Raspberry Mocha Brownies

There is nothing I like more than a good brownie.  In fact, more often than not, I have to hold myself back from baking them on a Friday night after a long work week.  Like last week - last week, I worked over 60 hours and was ready to crash by the time I got home on Friday night.  Sometimes, work is enough to just drive you mental.

Happily, though, the work I've been doing has all been projects that I am passionate about and enjoy working on.  My boss has also really helped - he allowed me to sit in on some interesting meetings to continue to learn about the sectors that I'm most interested in.  When you're working on interesting projects, your excitement takes over and you don't realize how many hours you're putting in the office.

Until you get home that is.  Although I don't drink coffee, I really needed a pick-me-up and these brownies were just the thing.  I love the tartness of the raspberries soaked right into the brownies.  It makes the whole thing taste incredible.  Plus, is there anyone in the world that does NOT like chocolate and raspberry?  It is one of my absolute favorite combinations!
Raspberry Mocha Brownies
Serves:  9 (9x9 pan)
1/2 cup butter, melted (1 stick)
1 cup brown sugar
2 eggs
1/2 cup Iron Brew Coffee (made according to package directions)
2 teaspoons vanilla
1/2 cup + 2 tablespoons unsweetened cocoa powder
2 cups flour
1/4 cup dark chocolate chips
1 cup fresh raspberries

Preheat the oven to 350 degrees F.  Grease a 9x9 pan and set aside.  In a large bowl, beat butter, sugar, eggs, coffee, and vanilla until fully combined.  Add cocoa powder and flour.  Beat until just combined.  Stir in chocolate chips and raspberries.  Pour into the prepared pan and bake for 15-18 minutes, until the brownies are set but still slightly fudgy.  Let cool completely and then cut and serve.  To store, place in an airtight container and store for up to 5 days.

  1. Oh my gosh, I would be in brownie heaven with a pan of these. I love the depth of flavor that just the right amount of coffee lends to baked goods. These just look amazing.
