Without friends, it's hard to really drink yourself into oblivion. I mean, it's totally possible, but something that I would avoid without good reason. Which brings me back to this wedding. It was a wonderful time and the bride looked beautiful and beaming, and the groom (my cousin) was just as happy. In fact, he cried through almost the whole ceremony he was so happy. What a lovely way to feel on your wedding day.
But then there was the open bar and since John was happy to drive us home and take care of me, I was happy to keep on drinking. There's a small debate going on in our house about how many drinks I actually had but regardless, it was a lot. And when you have a night like that one, the next morning is just screaming for some heavy, delicious food. Like this pizza.
Naan Breakfast PizzaServes: 2 (2 pizzas)
2 naan (make your own)
1 cup diced tomatoes (or plain tomato sauce)
2 tablespoons garam masala
1 1/2 cups mozzarella
2 tablespoons cilantro, for garnish
Preheat the oven to 500 degrees F. Place the naan breads on a greased baking sheet. In a small bowl combine the tomatoes and garam masala. Evenly spread over the naan. Top the tomato mixture with mozzarella. Break 1 egg over the middle of each pizza. Bake for 10-12 minutes until egg is set. Then, garnish with cilantro and serve immediately.
