Time-Out: Strawberry-Rhubarb Soda

There's just something about homemade soda.  I'm not sure what it is, or why, but it takes such little effort and tastes so incredible that it's hard to deny making it.  In fact, I wonder now why I don't just keep some syrups in the fridge at all times so when a craving strikes - BAM - it's readily available.  Now that I think more about it, that's probably not the best idea for my waistline.

Nevertheless, today is a very special day.  It's the day between 2 very special birthdays.  My grandma, Awa, turns 81 tomorrow while my dad had his birthday yesterday!  Happy Birthday to them both!  Mom is now reading this wondering where her shout-out was for HER birthday which happened in May.  Happy Birthday Momma!  Better late than never I always say.  Plus, she's the one that thinks I "share too much" on the blog.

You can never win.  Rhubarb is one of John and Dad's favorites and the season is really almost over, only a few weeks after it first begun.  The quality that we've seen at our local greenmarket has gone downhill fast which means we are buying as much as possible and freezing it for later.  The geniuses we are...but while we still have some rhubarb sitting around the house, we have been making some fun stuff with it!  This soda first and foremost.

Strawberry-Rhubarb Soda
Serves:  4 (1/2 cup syrup)
1 cup water
1 cup sugar
5 strawberries (about 2/3 cup)
2 rhubarb stalks chopped (about 1/2 cup)
4 cups non-flavored sparkling water

In a large saucepan, mix water and sugar, until most sugar has dissolved.  Add strawberries and rhubarb stirring well.  Let simmer for 15-20 minutes, until the sugar is fully dissolved and the fruit is mush.  Remove from the heat and strain, pressing the solids to extract as much liquid as possible.  

Divide the syrup into 4 glasses and fill each glass with 1 cup of sparkling water.  Stir well and serve immediately.
